In this image it's only taking place on the dark areas sorting upwards though some algorithmes start from a bright pixel and stop at a dark pixel and some just contain the sorting within entirely "dark" or "bright" areas. Pixelsorting involves sorting intervals(strips of where the sorting happens) and a threshold-mask that determines where in the image the intervals are to take place. To get the more tight control over where it happens and making it streaky with long uninterrupted sorting intervals really depends on the image and how you decide to threshold the image. I'm pretty sure that this image may have used my plugin to get the angled sorting and that the other two probably used Processing.
